The regional analysis approach adopted by the Research Center for the Development of Coffee Regions of the Autonomous University of Chapingo allows us to understand the complex problems of coffee-growing areas from a holistic point of view. Given the high degree of intermediaryism, low prices, lack of governance in the sector and policies that discourage small-scale coffee production, artisanal roasting of beans is part of a key resilience strategy that coffee growers have implemented in the face of the abandonment of the State to this important activity in the most remote regions of Mexico and which is carried out mainly by groups of indigenous women. This book narrates the experience of the artisans, the way in which they carry out the process, techniques, tools and deficits that they present when carrying out this important work. Furthermore, the objective is to make visible and value this ancestral activity carried out by peasant women. From a technical point of view, it allows us to contribute to improving the process carried out by indigenous women, at the same time promoting social and economic inclusion through a comprehensive and equitable approach in the field of knowledge exchange between the University and the communities, highlighting the need for recognition and institutional support to promote the economic resilience and sustainability of artisanal coffee farming in Mexico.
